This is perfect for St. Patrick's Day- or for those moments when nothing but green cake would do! And it's painfully easy.
In a mixer bowl, blend:
1 pkg Pistachio pudding mix
1 yellow or white cake mix (2 layer kind)
4 eggs
1 1/4 cups water
1/4 cup salad oil
1/2 teaspoon almond extract.
Beat for 2 to 3 minutes with mixer
Pour into greased and floured 10" tube pan.
Bake at 350 for 50 to 55 minutes.
Doesn't need icing, but a dusting of icing sugar works well.

Oh good lord - I'd forgotten green cake!!! :P MMMMMMMM - bday cake for me this year will be green - and I ain't talkin' environmentally friendly
